Paprika Roasted Cauliflower Steaks

Ingredients

  • 1 large cauliflower (about 1kg), cut into 2cm thick slices ("steaks")
  • 3 tbsp olive oil (about 45ml)
  • 2 tsp sweet paprika (about 6g)
  • 1 tsp smoked paprika (about 3g)
  • 1 tsp garlic powder (about 3g)
  • 1 tsp salt (about 5g)
  • Black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Method

  1. Preheat the oven
    Heat oven to 200°C (fan 180°C). Line a baking tray with parchment paper.
  2. Season the cauliflower
    In a small bowl, mix olive oil, both paprikas, garlic powder, salt, and pepper. Brush over both sides of each cauliflower steak.
  3. Roast
    Place cauliflower on the tray and roast for 20–25 minutes, turning once, until tender and slightly charred at the edges.
  4. Serve
    Arrange on a platter, sprinkle with parsley, and serve hot.

Chef’s Note

These steaks make a great vegetarian main or side dish, and pair beautifully with tahini dressing or a lemon yoghurt sauce.
