Ingredients
- 1 large cauliflower (about 1kg), cut into 2cm thick slices ("steaks")
- 3 tbsp olive oil (about 45ml)
- 2 tsp sweet paprika (about 6g)
- 1 tsp smoked paprika (about 3g)
- 1 tsp garlic powder (about 3g)
- 1 tsp salt (about 5g)
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
Method
- Preheat the oven
Heat oven to 200°C (fan 180°C). Line a baking tray with parchment paper. - Season the cauliflower
In a small bowl, mix olive oil, both paprikas, garlic powder, salt, and pepper. Brush over both sides of each cauliflower steak. - Roast
Place cauliflower on the tray and roast for 20–25 minutes, turning once, until tender and slightly charred at the edges. - Serve
Arrange on a platter, sprinkle with parsley, and serve hot.
Chef’s Note
These steaks make a great vegetarian main or side dish, and pair beautifully with tahini dressing or a lemon yoghurt sauce.
