Paprika Chicken Skewers

Prep Time 15 minutes (plus 30 minutes marinating)

Ingredients

  • 600g chicken breast, cut into 3cm cubes
  • 2 tbsp olive oil (about 30ml)
  • 2 tsp sweet paprika (about 6g)
  • 1 tsp smoked paprika (about 3g)
  • 2 cloves garlic (about 7g), minced
  • 1 tsp lemon juice (about 5ml)
  • 1 tsp salt (about 5g)
  • Black pepper, to taste
  • Lemon wedges, to serve

Method

  1. Marinate the chicken
    In a large bowl, mix olive oil, both paprikas, garlic, lemon juice, salt, and pepper. Add chicken cubes, toss well, and marinate in the fridge for at least 30 minutes.
  2. Assemble the skewers
    Thread chicken cubes onto skewers, leaving a little space between pieces for even cooking.
  3. Grill
    Heat a barbecue or griddle pan over medium-high heat. Cook skewers for about 5–6 minutes per side until chicken is cooked through and lightly charred.
  4. Serve
    Arrange skewers on a platter and serve hot with lemon wedges.

Chef’s Note

For extra juiciness, replace half the chicken breast with boneless chicken thigh pieces.
