3 tbsp olive oil (about 45ml)
2 tsp sweet paprika (about 6g)
½ tsp smoked paprika (about 1.5g)
1 tsp garlic powder (about 3g)
1 tsp salt (about 5g)

Preheat and prepare
Preheat oven to 220°C (fan 200°C). Line a large baking tray with parchment paper.

Wash and peel (optional) potatoes, then cut into evenly sized fries.
Season
In a large bowl, toss fries with olive oil, both paprikas, garlic powder, salt, and pepper until evenly coated.
Bake
Spread fries out in a single layer on the baking tray. Bake for 30–35 minutes, turning halfway, until golden and crisp.
Serve
Sprinkle with parsley and serve hot with your favourite dip.
Chef’s Note
For extra crunch, soak the cut potatoes in cold water for 30 minutes before seasoning and baking.
